Corbieres is an important appellation o f the LanguedocRoussillon region of southern France. One of the better-known Languedoc titles. Corbieres is also one of the most productive. Its vineyards turn out large quantities of red and rose wines.
The distinctive, tart, earthy flavor has wonderful subtle (and some not so subtle) variations. Regardless of how they are made, chevres have a unique tang and aroma right from the start, growing robust and bold in these rapid-aging cheeses.

It is an American version of the Swiss Emmental and is known for being shiny, pale yellow. While it has a firmer texture than baby Swiss, its flavour is mild, sweet and nut-like. It has a savory, but not very sharp taste.
