Syrah - $32

Shiraz is known for its spicy blackberry, plum, and peppery flavors. Often there are additional notes of licorice, bitter chocolate and mocha. Shiraz is even affected by growing temperature - warmer climates bring out the mellower flavors.

Asiago

Asiago is an Italian cow's milk cheese that can assume different textures, according to its aging, from smooth for the fresh Asiago (Asiago Pressato) to a crumbly texture for the aged cheese (Asiago d'allevo) which the flavor is reminiscent of Parmesan.

Blue Cheese

A general rule of blues is that creamy blues are usually milder than the crumbly ones. This is because the extended aging of crumbly blues allows the veining of blue mold to spread deeper through the cheese, intensifying the Blue Cheese flavor.

Cheddar

Cheddar is traditionally creamy white in colour but due to the addition of tasteless food colouring, it often appears dyed in an orange hue. The cheese can be made from raw, pasteurised or thermalized milk to retain more of the flavourenhancing enzymes.
